Pizza dough hydration (water as a percentage of flour) is one of the most important parameters of pizza baking: a 65% and a 68% dough behave completely differently above the stone. Without gram-accurate measurement there's no way to keep reproducible quality.
This scale measures to 0.1 g accuracy up to 3 kg, in g, ml or oz. The display runs the built-in timer in parallel, so autolyse, rest, proof and bake can all be tracked on the same device.
